Last week I asked my dad what he wants from me for Fathers Day. Knowing that I bake, he asked for his two favorite desserts: Chocolate Cream Pie & Key Lime Pie. Usually I would search for a recipe at Allrecipes.com or Epicurious.com and read a gazillion reviews searching for revisions and helpful tips. But this time I figured I'd take my search to the streets... err... blog, rather. Anyway, I'm asking you for your favorite Chocolate Cream or Key Lime Pie recipes! Something tried and true and always delicious. If you have a recipe for a tasty pie crust, that would help too! I've never made crust from scratch, but I'd like to! My favorite Key Lime Pie is this one from AllRecipes. It's the only one I've found that doesn't use sweetened condensed milk (I think s.c.m. is nasty).
The best pie frust *ever* for something like these two pies would ahve to be a shortbread crust - SO easy!
Shortbread Crust -
1/2 cup unsalted butter
1/2 cup shortening
1/2 cup powdered sugar
2 Cups flour
1/4 tsp baking powder
1/8 tsp or so salt
preheat 350
Beat butter, shortening and sugar till light and fluffy
mix in flour, salt, and baking powder
press into greased pan on bottom and up sides - it'll be rather thick.
prick all over with a fork to avoid too much puffing
Bake 15 minutes or till just starts to turn golden brown.
It's light, it's crumbly, it's tender it's buttery and fabulous! (You can use all butter instead of half and half, but I think the shortning adds to the tenderness)

My favorite recipe for chocolate pie is at home..but I'll make myself a note to write it down and email it to you.
Best tip I can give you...on homemade crust...if you have a food processor..it's a life saver..so much easier to just toss all the stuff in there and pulse, than it is to cut in your shortening.
This is the pie crust I use. It's from The Dessert Bible by Cristopher Kimball. The thing to remember about pie crust is that it's a cold butter dough. Having all of your ingredients cold will help the crust be lighter and flakier in the end.
The recipe says to use 5 Tbs butter and 5 Tbs shortening, but I just use all butter.
10 Tbs frozen butter
1 1/4 c ap flour
1/2 tsp salt
2 Tbs sugar
4-5 Tbs ice water
Mix dry ingredients. Grate butter into the dry. (I find it a good idea to pop the grater in the freezer too, so I don't end up with melted butter everywhere)
Toss the mixture with your fingers, breaking up any clumps.
Sprinkle half the water over the dry. Using a rubber spatula fold and mix the dough until it begins to stick together. Add a few more tsp of the water and continue to mix for about a minute. The dough should be fairly wet, if not add a little more water.
Shape the dough into a disk and wrap in plastic wrap. Let it rest for about half and hour in the fridge before rolling it out

You gotta use Dorie Greenspan's recipe for pie crust. It's the Good For Almost Everything Pie Dough... it's on pg 442 of her book Baking From My Home To Yours. I just used this to make Apple Pie last weekend and it's fantastic :)

It is like Key Lime Pie with a coconut and a meringue layer...yum!
For Chocolate Cream Pie, I like Martha Stewart's recipe from her Baking Handbook. I can't find the recipe online, unfortunately, but if you have her cookbook this one is a real winner!

it is good with meringue or fresh whipping cream. My favorite pie comes from Culinary Concoctions by Peabody. It has mascarpone cheese and is slightly less tart than other recipes. It is called Camping Key Lime Pie and you can find it on her blog by doing an internet search. You will not be disappointed with either pie!
Although I trust that you probably already know, pie crusts are best made with very cold ingredients.
Also, you might not want to add sugar to your pie crust. the chocolate cream or key lime is the sweet part of the dessert. You don't want an overly sweet pie crust, just something nice to balance out the custard part.
