When I got home, there was a container on the stove that held the few cookies he apparently couldn't fit into his drooling, disgusting, gluttonous mouth. Some of them were worthy enough for a photo, but none of them were worthy of eating. Who knows if any of his slimy, dripping spit got onto any of them. They had to go in the trash. But I'll have you know, the uncontaminated cookies I ate yesterday were DELICIOUS! Thank you to Amanda for making them on her blog and giving me the idea! And big ups to Smitten Kitchen's mom for being the original holder of this recipe! ;)
Brownie Roll-Out Cookies
3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup unsalted butter, softened
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup unsweetened cocoa
Preheat oven at 350 degrees. Whisk dry flour, salt and baking powder in bowl and set aside. Mix butter, sugar, eggs, vanilla and cocoa in mixer. Gradually add flour mixture, and mix until smooth. Wrap in plastic and chill for at least one hour.
Roll out cookie dough on floured counter. (I rolled mine between two sheets of plastic wrap. It was buttery enough that it didn't need any flour to keep it from sticking.) Cut into desired shapes, brushing extra deposits of flour off the top. Bake on a parchment-lined baking sheet for 8 to 11 minutes (the former for 1/8-inch thick cookies, the latter for 1/4-inch cookies) until the edges are firm and the centers are slightly soft and puffed. (My cookies were 1/4-inch thick and they only needed 9 minutes in the oven.)
Transfer to a wire rack to cool.

My cat once pulled an entire cooling rack of cupcakes on the floor.. He was in trouble for a few days! But these look really good! Glad they came out great and at least it wasn't the whole batch!
Oooh the dog eating the goodies, happens to the best of us. multiple times. Totally sucks though! Look good, now I just need to find all my heart cookie cutters!

Oh man that's a bummer :( I will never forget I had a dog as a kid who ate my birthday cake one year...that sucked! Needless-to-say, all my friends weren't to happy about it either LOL But your cookies were adorable!!

These are really cute! I cannot imagine baking another cookie this week though, as yesterday I spent 5 hours baking waaaay too many cookies for a charity drive at Husband´s workplace. Oh, how I love brownies..and cookies. Someday, when the thought of rolling dough is appealling again, I´ll definitely try these! Thanks for sharing.

But on the bright side, lesson learned. No matter how much plastic wrap you use, it won't save cookies from hungry beagles.

Oh, snap! I would have flipped out. That's just another reason to give my babygirl as to why I don't want a dog. All that work gone. They were so pretty, too!

i made these today! but i wasnt at all pleased with the texture of them :( i thought they would actually be like brownies in cookie form. is that what they were supposed to be? because if they were, boy i screwed up.
Arshia, they are slightly chewy like a brownie. Not crisp like a regular roll-out sugar cookie. But I wouldn't say it tastes like a brownie in cookie form. Sorry if the name was misleading.
