Ladies and Gentleman (uh, Adam, I think I can address you solely, lol), I have discovered a new love... Trader Joe's! I know I'm a little late, but in Hampton Roads we're always slightly behind on the trends (we got our first cupcake shop 2 years ago and our first Trader Joe's this year). Our only TJ's is in Va. Beach, which is about 30 minutes away from my house. Thankfully, I work at Just Cupcakes, whish is literally a stones throw from there! HURRAY! Anyway, you may remember me mentioning that I won a cookbook contest on

Cooking with All Things Trader Joe's. She gives away one cookbook each month, and the winner of the cookbook is asked to please make one recipe from the book and post it on their blog w/in 30 days.

I decided to make the Green Garbanzo Salad, except I substituted edamame. Wednesday when I left work I decided to do some grocery shopping. I bought all the ingredients for the salad (which, btw, the book says all of the capitalized ingredients in the recipes can be found at TJ's... umm no! I couldn't find the frozen garbanzos, the frozen shelled edamame, or the super tiny mozz. balls). I decided to get a container of the fresh, ready-to-eat edamame, as well as a bag of frozen, ready-in-5-minutes edamame and see if it was worth the extra $1 to buy it pre-cooked and already shelled. Shelling the soy beans was super easy, so yes, I will be saving my $1 and buying the whole frozen pods from now on! As for the mozz. balls, I bought the regular sized marinated mozzarella and quartered them.
This salad was so delicious! Josh even loved it, and his favorite food in the world is cheeseburgers and loaded baked potatoes! Speaking of cheeseburgers... we ate this salad as a side dish. Wanna know what it was next to on our dinner plates? Cheesy Hashbrown Hamburger Helper! Yeah, we know how to do it up right in the 757! Lol ;) Anyway, I made a double batch of the salad, and between Josh and I it was gone in 2 days! It's safe to say this recipe is going to become a staple in the Baker household!

Green Garbanzo Salad (from Cooking with All Things Trader Joe's)
Serves 4
2 cups frozen Green Garbanzos or frozen shelled edamame
2 tsp salt to flavor boiling water
1/2 cup Perlini Super Tiny Fresh Mozzarella balls
1/4 cup diced red onion (I will reduce this next time, as it was more than enough for a DOUBLE batch.)
1/2 tsp minced garlic or jarred Crushed Garlic
1/4 cup Tuscan Italian Dressing (We barely used this much in a double batch. I'd say just add it to taste.)
Fresh basil, for garnish
1. Cook garbanzo beans in salted water. Drain.
2. Combine all vegetables in a large bowl. Pour vinaigrette over salad, add mozzarella balls, and toss gently.
3. Garnish with chopped fresh basil.

There is another TJ in Hampton Roads - in Newport News. I know right, how did the Peninsula beat the Soutside on that one?
Oh that's what TJ stands for! The salad looks nice, I eat salads like crazy in the summer.

The Newport News Trader Joe's is right by my house and I love strolling that market. I usually walk out with one or two things after lusting after most of the goods. I love their handwritten descriptions. :)
That looks great! Thanks for participating in my giveaway. You'll soon learn what a fickle lover TJ's is. The stuff you've mentioned CAN be found at Trader Joe's -- just not all of them. Just when you fall in love with something, your branch won't carry it anymore. There are products I love that are no longer available to me, but people in Southern California still get to have it. It can be very frustrating! As for the Edamame pods, I buy the frozen, cooked, salted version and I'm never without them. It's totally worth it. They keep my lunch cool, as well, and are thawed by lunch time.

I can't live without my Trader Joe's! Be sure to try all their nuts and dried fruits too. The dried mango slices with chili is awesome! And this salad looks yummy!!!
we do not have a trader joe's or whole foods or anything like that where i live :( kroger is the most diverse grocery store! sad day.

I am pretty jealous you have a TJ's. We have one here in Raleigh, but it's a bit far away. There's going to be one built a little closer to me eventually, that'll be awesome.

I love edamame, but never would have thought to pair it with mozzarella. Interesting combo. Totally jealous about your TJ's. I'm in Texas and there are none.

We don't have Trader Joe's in Ireland... :( The closest we have is Holland & Barrett for healthfood staples and little local shops for organic fruit & veg.
That looks incredible! I am so glad you are expanding your blog and including a Trader Joe's section. We have Jungle Jim's about 1.5 hours from my house and I love going there-- it is so cool! You should look it up online because it is so unique! It's like a theme park for foodies.
I've sent about 10000000 emails to Trader Joe's so they open a store in Canada... nothing yet :(

i'm up near the TJ's in Newport News. Williamsburg has one now too that i think is a little bigger, or at least laid out better to get more stuff in it.
I haven't been in TJ's in a while, but they do have some good stuff. They will let you sample things too, not just what they have as the featured item, but almost anything in the store. I needed cherries for a recipe, but couldn't find what i wanted, so the sales guy opened a jar of the cherries they had so i could decide if what they had would work.
Looks great. I just made an edamame salad recently. Very refreshing and so healthy!
