Lemon Ricotta Cookies w/ Lemon Glaze (I omitted the glaze and sandwiched the cookies with Cooked Lemon Frosting, recipe below)
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 stick unsalted butter, softened
2 cups sugar
2 eggs
1 (15-ounce) container whole milk ricotta cheese
3 tablespoons lemon juice
1 lemon, zested
Glaze:
1 1/2 cups powdered sugar
3 tablespoons lemon juice
1 lemon, zested
Preheat the oven to 375 degrees F.
In a medium bowl combine the flour, baking powder, and salt. Set aside.
In the large bowl combine the butter and the sugar. Using an electric mixer beat the butter and sugar until light and fluffy, about 3 minutes. Add the eggs, 1 at a time, beating until incorporated. Add the ricotta cheese, lemon juice, and lemon zest. Beat to combine. Stir in the dry ingredients.
Line 2 baking sheets with parchment paper. Spoon the dough (about 2 tablespoons for each cookie) onto the baking sheets. Bake for 15 minutes, until slightly golden at the edges. Remove from the oven and let the cookies rest on the baking sheet for 20 minutes.
Glaze:
Combine the powdered sugar, lemon juice, and lemon zest in a small bowl and stir until smooth. Spoon about 1/2-teaspoon onto each cookie and use the back of the spoon to gently spread. Let the glaze harden for about 2 hours. Pack the cookies into a decorative container.
Cooked Lemon Frosting
1 1/2 cups granulated sugar
1/3 cup all-purpose flour
1 1/2 cups milk
1/3 cup heavy cream
2 sticks (1 cup) unsalted butter, soft but cool
Zest of 1 large lemon
2 teaspoons lemon juice
Whisk together sugar, flour, milk, and cream in a saucepan. Boil over medium heat until mixture becomes extremely thick like glue, about 15-20 minutes. Whisk frequently to prevent burning.
When mixture has thickened, pour it into the bowl of an electric mixer. Using the paddle attachment, beat on medium-high speed until mixture cools to room temperature, about 15 minutes (test it by touching it with the back of your hand or wrist). Add the soft but cool butter a few tablespoons at a time. When all the butter has been added, increase speed to high. The frosting will look too soft at first, but it will thicken after about 3-5 minutes on high speed. Stir in lemon zest and lemon juice.

What a good idea. I'm a fan of whoopie pies myself. I haven't had a chance to make these yet this month. I may try this instead of the glaze.

I just posted about the lemon ricotta cookies too. They were cakey, but I don't mind cakey cookies. I love the whoopie pie idea. I was going to make a cream cheese filling for mine, but the cookies were gone by the time I decided to actually do it.

Me, too, on not being a huge fan of cake-like cookies. I am, however, a huge fan of lemon. I will definitely try these sometime soon.
I'm not a huge fan of lemon desserts, but I'm hosting a dinner this weekend and these sound perfect. The menu's got some chowder and hearty foods on it, so this should be just the light and tangy ticket for dessert! And the boy loves lemon desserts (is this a male thing? jeez).

Lemon and ricotta = YUM. I don't know if you can get it there, but in Australia we can buy the ricotta fresh from the deli. It's so much creamier than the container ricotta and you can get it in low fat which tastes just the same as the regular stuff. Worth having a look for.
