I was feeling a little lazy this morning so I chose an easy recipe for drop biscuits. Instead of kneading the dough, rolling it out, and cutting it into circles, you simply use a measuring cup or disher and scoop it right onto the baking sheet! They came out fluffy and soft with a nice crust on the bottom. They weren't as light and airy as my dream biscuit, but that might be because they're dropped and not cut out! I have this complex. It's a condition caused by my abundance of baking books and knowing that I have so many biscuit recipes on my shelves. I'm always trying to find one better. So I'll probably try a few more lazy biscuit recipes before I settle on the one I'll keep making til I'm 90.

Makes 12 (I got 11 with a #20 scoop)
2 cups (10 oz) all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon sugar
3/4 teaspoon salt
1 cup cold buttermilk
1/2 cup (1 stick) unsalted butter, melted and cooled
2 tablespoons salted butter, melted (for brushing on top)
I didn’t have buttermilk, so I added 4 tablespoons of buttermilk powder to the flour mixture. Then I used 1 cup cold water in place of the cold buttermilk.
Center a rack in the middle of the oven and preheat to 475 F. Line a large baking sheet with parchment paper.
Whisk the flour, baking powder, soda, sugar, salt, and buttermilk powder (if using) together in a large bowl. In a large measuring cup, stir the cold buttermilk (or water) and melted butter together until the butter forms small clumps. (Mine pretty much all clumped together.) Stir the butter mixture into the flour mixture with a wooden spoon until just incorporated and dough pulls away from the side of the bowl. (My dough never came away from the bowl.)
Scoop dough using a 1/4 measuring cup or disher and drop onto baking sheet 1 1/2” apart. Bake until golden brown, 12-15 minutes.
Additionally, you can brush the tops with melted butter as soon as the biscuits come out of the oven. Serve warm.

Making homemade biscuits in the morning is not lazy! I don't care of you cut them, dropped them, or had them flown in. These looks tremendous...mmmmm.

When you're ready for cheesy biscuits I've got a recipe from school that you can add to your many others :) They come out very good.

First, I wanted to say that I love the new direction. Cupcakes will always be at the top, but it's great to get other types of recipes from my favorite cupcake bakers!
I consider "Lazy" biscuits to be the ones my roommate buys premade and frozen in a bag. Once baked, you could throw them through a brick wall! They're awful! One of my old roommates, on the other hand, has a recipe for great cheddar biscuits that rivals that of Red Lobster.I'm still trying to get the recipe from her so i can try a white cheddar variation. If I can get it right, I'll be sure to share!
Also, on a different note...the walmart where I live has tons of christmas stuff on super-clearance...I got a bunch of graphic tees for $2 each, and some awesome fleecy cupcake pajamas for $3! They're super-comfy, I'm actually wearing them right now...you should check it out!
Raine, I believe I have those pants! There's a picture of them in my Christmas present post a few clicks back. :) And I totally hit up that Wal-mart clearance sale. I bought 3 packs of the wilton gel colors, a TONS of christmas and foil baking cups, some mini cutters, and a bunch of sprinkles!
I'm always trying to find the best recipe in anything too! Even with the same ingredients, the mixing method can make a difference too so I feel like I have to bake a lot to figure out what is the best. It's kinda annoying b/c I'm left with so much food, but it's still lots of fun!!
I like my biscuits fluffy and moist like you too. Thanks for offering to send the apple pie recipe, but I don't think I''ll be making a pie in a really long time! I'd rather eat the apples fresh!!
Are they really that easy? They looks good. Though I'm with your parents in that I really like the flaky ones. While there are confessions going on I'll confess to Popeyes' biscuits being my fave!

Wow.Those looks pretty good. Though with biscuits, it's always better warm than cold.. so I would never be able to finish all of that!
I am from the frozen north, so I had no idea that biscuits were so important. I also didn't know what a hush puppy was until I was 20

I made these and thought they were really good. I did add garlic and oregano and some parsley flakes to them for more savory-ness.
May I make a request? The busicuts from Red Lobster...those "Cheddar Bay Busicuts"...they're perfect...moist..flaky...cheesy...garlicy......SOOO GOOD~!!!!

I'm a big biscuit fan and the best biscuits I've ever had by far are the recipe from The Weekend Baker book. Amazing and pretty easy to make.
