Martha's One-Bowl Chocolate Cupcakes

One of my mom's co-workers is joining the military, and today was his last day at work. He really loves when my mom brings my cupcakes on Wednesdays, so she asked me to make him a batch before he left. I gladly accepted! I didn't want to use cake mix, because I'm drowning in it at work all day. But I wanted something quick and easy. My mind went straight to Martha Stewart's famous "One-Bowl Chocolate Cupcakes" I've heard so much about. People, people, people! I'm hear to tell you it's not hype. These cupcakes are INSANELY good. Actually let's just call apples apples. These cupcakes are PERFECT! They're soft. They're chocolatey. They're moist. I topped them with more of the chocolate mousse from the last post. I say this all the time about a gazillion recipes, but these are my new "go-to" chocolate cupcakes!


MY NOTES: I halved the recipe and got 11 cupcakes. I made my own buttermilk by adding a tiny bit of white vinegar to the whole milk.

Martha Stewart's One-Bowl Chocolate Cupcakes
Makes 2 dozen

3/4 cup unsweetened cocoa powder
1 1/2 cups all-purpose flour
1 1/2 cups sugar
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
3/4 teaspoon salt
2 large eggs
3/4 cup warm water
3/4 cup buttermilk
3 tablespoons vegetable oil
1 teaspoon pure vanilla extract

Directions
Preheat oven to 350 degrees. Line cupcake pans with liners; set aside. In a large mixing bowl, sift together cocoa, flour, sugar, baking soda, baking powder, and salt. Add the eggs, warm water, buttermilk, oil, and vanilla; mix batter until smooth, about 3 minutes. Scrape down the sides and bottom of bowl to assure batter is well mixed.
Divide batter evenly among liners, filling each about one-third full. Bake until tops spring back when touched, about 20 minutes, rotating pan once if needed. Transfer to a wire rack; let cool completely.

what a coincidence , my hubby who never asks for anything sweet ,wants me to bake a cake and this would be the perfect recipe as i have all the ingredients with me and it seems to be yummy!!!!!

I have never heard about this recipe, but after reading it i have bookmarked to ake them.
I liked the idea you made your own buttermilk.
After adding the vinegear to milk did you had to leave it for a while or can you use it immidietly.

Oh, I loooooooooooved "Six Feet Under". I watched every season off NetFlix...it was SOooooooooo good. Did you like the last episode? I know there was a lot of controversy over it. I thought it was beautiful.

I just made these cupcakes and they were outstanding- far better than any of the other more complicated chocolate cupcake recipes I have tried- and SO EASY! I used your vanilla and chocolate cream cheese frosting recipes to top them off and they got rave reviews from everyone at the party. This is officially my new chocolate cupcake recipe. Thanks!!

These too are my favorite chocolate cupcakes. There's a slightly different one in her baking book which gives you a darker looking cake which is also very moist and yummy, but this one with the buttermilk for some reason I like more.

Thanks for posting this! I made these today with the mousse and they were amazing! So light and fluffy. I was afraid with how soupy the batter was that I did something wrong, but they turned out fantastic.

Okay, I believe you :) And your swirl is so pretty. I just realised I need some serious help with my frosting. I made some cupcakes last week and the frosting looked like perfectly-formed turd. Sob!

a go-to chocolate is very hard to find for me! i tried this one a few months ago and was NOT impressed. i was bummed because lets face it, one-bowl is sooo easy! maybe i'll give them a go again just in case the first batch was a dud. all 5's!

My favorite cupcake. But I have a question: Do you think there's a way to convert this into a vanilla? I assume that if I simply take out the cocoa I'll be lacking some dry ingredient volume, but there must be a way to overcome that problem...? Any idea?

I made these using the buttermilk substitute and they rose very unevenly - rather reminded me of the Mad Hatter's tea-party, sadly this wasn't the effect I was after. Any suggestions as to why this happened? I will try another batch tomorrow with real buttermilk to see if that makes any difference.

Hi I tried your "one bowl" cupcakes and although they were nice, they kinda lacked oomph! I saw another MS one bowl choc cupcake recipe which has slightly different amounts of ingredients so am wondering if there are 2 such recipes? You red velvet cupcakes, however, were da bomb! Thanks.
